    Wow, that is the leanest looking piece of corned beef I've seen I'm good for once a year because it's usually fatty, but then looks like a once/week kind.

    There is still a fair amount of fat. The sous vide method gives it a very firm structure. Lot of the fat melted off and filled the bag, it stayed super moist as a result.

    I got a late start and did this one for 29 hrs at 155F, 48 hrs at 135F is supposed to be even better.

    I topped it with turbinado sugar and splashed a bit of bourbon on it, finished with 4 minutes under the broiler. It darn tasty.

    Samey-samey to me. Miss them both. They don't really like this side of the state. You will see them here and there in town in protected areas around homes but not out in the basin where I live.

    That said those purple ones are some of the earliest to bloom. I had a rhody that looked like that at my place on Mercer Island that would bloom before Easter. That particular variety seems to be naturalized on the island.

    Azalea, correct. Same family as Rhodies, of course. This poor little guy really got smushed when we got all the snow last February, but he's come back nicely in the last year.
