Zwift opened up clubs again, if we started a tgr one I think you can do rides without having to specifically invite everyone, although I haven't looked really close at how that all works.
Doing tdz stage 6 regular ride at 7 mst if anyone else wants to jump in.

I am a technology idiot. I have started doing some training on ifit, and am linking it with strava. On a couple of rides it pulls over my milage and elevation, but on most it just pulls over time and calories and the fact that I did one of their rides. Ultimately, all I care about syncing is the distance and times so I can chart that towards a goal I have set for myself with a mountain bike century in a few months. Any Ideas how to address this sort of thing?

Never. If it was good enough for Fausto and Virenque it's good enough for me. You modern day heathens with no principles, who do not soar like eagles above the alps as they did in the days of yore when legends when born, desperately try to cover up your missing souls with tall socks. It does not work, and though we cannot see your ankles, we can still see right through you to the empty place inside.

I just want you all to know that whatever my avatar looks like in Zwift, I’m usually riding my trainer in my 5.10 mountain bike flats with NO socks on commuter pedals. Oh and my road bike is from 1986.

I have the Wahoo desk. Not sure if they still make them but I remember knockoffs available on Amazon. Adjustable height, rolls forward and back. Big enough for laptop, remotes and snacks/water. Taking meetings via it was fine, actual working was more difficult.

TGR club is already created. I just need to invite everyone to join, as you can't search for clubs to join.
I've build a few test events and invited myself to test ride them to understand the starting pens, and options like results.
I hope to have next weeks rides set up with a sharable link, hopefully to make it easier. (and I'm designing a tall socks Jersey )

However - how many thousands do you spend on bikes? Buying a nice desk once is worth it. Most sit/stand desks will work. I have a Fully Jarvis, have also heard great things about uplifts.
