Good work!
Did I post this about scoring techniques? Remember how you score will encourage the direction of your loaf's rise.
BREAD SCORING TECHNIQUES: CREATIVE, DECORATIVE CUTS
With a blade in hand and a shaped round of dough on the workbench, bakers have an unexpected blank canvas before them. First and foremost, scoring bread dough with decorative cuts serves an important purpose: it guides a loaf to rise in a consistent, controlled, and optimal manner. But from there, let your creativity run free. I’ve heard if you use beer instead of water you can get good results

Doesn't alcohol retard some of the gluten formation? There's something like that I'm pretty sure

KQ - Can you make gluten free sourdough?
Being a glutard and a bread freak is a dangerous balancing act for me.

Sourdough is supposedly better for glutards. If you let it rise a few times, you reduce the gluten with each rise.
