    Good work!

Did I post this about scoring techniques? Remember how you score will encourage the direction of your loaf's rise.

BREAD SCORING TECHNIQUES: CREATIVE, DECORATIVE CUTS

With a blade in hand and a shaped round of dough on the workbench, bakers have an unexpected blank canvas before them. First and foremost, scoring bread dough with decorative cuts serves an important purpose: it guides a loaf to rise in a consistent, controlled, and optimal manner. But from there, let your creativity run free. As the old saying goes: we eat first with our eyes.

Was at Costco other day and found some blueberry vanilla goat cheese, its fantastic on SD bread. Also got a proof basket that came with some other handy bread gadgets.

Got a batch going today, bakers later.

Doesn't alcohol retard some of the gluten formation? There's something like that I'm pretty sure

Not sourdough but could probably be adapted or just follow the recipe as is - looks tasty!

KQ - Can you make gluten free sourdough?
Being a glutard and a bread freak is a dangerous balancing act for me.

Sourdough is supposedly better for glutards. If you let it rise a few times, you reduce the gluten with each rise.
