    I only put a little smoke to it. Didn’t want it to overpowering.
    Lamb should slow cooked eats very similar to slow cooked pork shoulder.
    Both the shoulder and the leg are fantastic. Just depends on what you’re going for.

    For my family it is or fish on Christmas Eve. Will start out with a dozen oysters, move onto a bowl of poke, then on to steamed clams, then Caesar salad with anchovies, then grilled mahi. Also on the table will be Dungeoness and Alaskan King crab; however, I will stay way from those

    Watcha cookin'?

    Going to do fancier stuff tomorrow so I went with smoked wings, broccoli and a salad for the Xmas eve family dinner. Kids whipped up desserts.. not really my thing. Was nice to do something simple and focus on hanging with the wife and kids rather than cooking something elaborate.

    Pork coppa roast for Christmas and then smoked then braised pulled beef neck sandos with a pile of fixins , (Cajun grilled shrimp, plenty of onions and peppers, chips and guacamole, tomato basil roasted garlic bruschetta, roasted asparagus with shallots, lemon and garlic and probably some greens ), for my good buddy’s bday celebration on Wednesday. (Kinda sucks having a bday the day after Xmas so we like throwing him a party with good eats)

    Did a 4 bone 9.7 lb prime standing rib roast. Basic rub of olive oil, kosher salt, herbs de provance, and fresh garlic. First one I've done in this oven and it turned out pretty good. Served with horseradish sour cream, a dark cherry chutney, or a black truffel cream sauce. Had bottles of Haute Medoc Bordeaux and Walla Walla Cabernet to wash it down.

    I did that 6 years ago, for no other reason than it was ludicrous, and I just wanted to, and could afford it at the time.

    It, no pun intended, stands up as one of the best meals I have ever eaten.
