I feel like I cracked the paella code… I’ve failed on the stovetop too many times. On the grill was much easier due to more even heat distro under that big pan and the ability to close the lid… I made the sofrito ahead of time….

Went to cook and found no gas on the grill.
Fired up a pan on the stove and seared some filets in some EVOO to perfection.

X2 on making paella on the grill.
I tried on my induction stove and it was nowhere near even enough. The grill was war better.
