    It ain't chorizo, but I take a similar spice mix and put it in lean turkey burger patties. They keep great in the freezer after cooking, reheat easily in the microwave, and are really good on an English Muffin with some eggs. The key for getting the right spice distribution and texture is to run the mix back through a grinder and then press the patties only lightly. And the macros are good.

    Costco had some really sexy looking fresh halibut fillets so I did a pair of em in the sous vide cooker @ 130* for 45m. First one had soy, grated ginger, honey powder, salt, and butter in the bag. The second had lemon and lime zest, grated garlic, butter, and salt. Seared and basted with no flip in butter to finish. Served with no plate or garnish. Ate em too fast for pix...

    How about chorizada tacos? We take carne asada chopped finely mix with sautéed chorizo. Fresh corn tortillas, garnish with crushed pineapple and tomatillo salsa.

    Our local chain grocery (a Krogers outfit) does a mix and match cooked chicken thing, 2 for $10. Roasted, fried, baked, whatevs. Screaming deal and pretty decent prep.

    We usually do a fried one one night, then a couple nights later do something fun with the roster one. This was recent, and delicious.

    Question for the dentists....

    Anybody know if there is any real difference between Arborio and Bomba? Can anyone tell which one is which from the photos?

    I have two unlabeled containers. One is each. Square container, slightly smaller grains. Round container, slightly larger grains.

    If I make paella with Arborio am I gonna die?

    If I make risotto with Bomba am I gonna die?

    Should I just mix them together?

    Don't mix. Pick either risotto or paella and make two batches, using each rice exclusively. See which is better. Risotto is probably the smaller dish so try that. To be fair you really need to make two batches of each dish. By then you will have used up your rice. 8)

    So around 1990 or so I was working in a slightly fancy resteraunt and we got a little grief for not labeling everything. So from that point onward, I labeled the duck fat as fuck dat. We didn't get any more grief. In fact I think certain parties stopped entering the kitchen altogether.
