    Ditch the pan and buy a peel and a stone. I buy a piece of slate at Home Depot trim it with angle grinder so it fits on bottom of oven.
    Get it hot as fuck. Make dough in morning put in steel bowl lube w olive oil let it rise in fridge all day, punch it down flatten into 3rds on counter let it sit 30 min, then roll out thin, cornmeal the heck out of peel slide onto stone, spin it halfway through cooking. eat, repeat.

    Sorry, no pics of that. I used smoked Gouda for the edge. Layered stuffing, gravy, turkey and grated Gruyere. It held together really well and was the best turkey day leftovers meal I've made.

    Stock market was closed yesterday so I had the day off and kids were at school. It never made it above 4 at my house so I said hell with skiing. Why not smoke up a lamb shoulder?
    Pics suck. Too excited to get to it.

    Simple cook.

    Rubbed with sea salt, fresh black pepper, paprika, fresh sage and thyme. A little all purpose dried herb seasoning too. Mortar-pestle with a few cloves of garlic and some avocado oil.

    Cooked on an Egg with a few large chunks of pecan at 225-40 till it hit 196. I didn’t want a bark on it so I wrapped around 140, (3 hours in - plenty of time to get Smokey).

    I never even sat down to eat it. Got my fill for dinner while pulling it. Kids were very pleased.

    Eaten, with full ironic awareness, with a slow braised pork shoulder with wine and thyme.
