    Any favorite spring roll ingredients? I did taco meat, cabbage, and cheese (Chinese enchiladas?) and they were awesome. I wanna try something else now.

    2 chicken breasts, beaten with an old wine bottle until thin, marinated with salt, garlic powder, red wine, sesame oil, oyster sauce.
    Sliced shallots, speck, salty cheese, finely chopped reconstituted morel mushrooms.

    Here is a ground chicken, daikon, bean sprout, mint, lime, and I added paprika… to a baked spring roll.

    Baking them feels like cheating. But frying them feels like carnage. Too much oil for such a large round of rolls.

    Awesome suggestion— Makers.

    Much obliged.

    The lime was pronounced. The mint was mild. Wish I had a chili sauce for dipping.

    9/10 will repeat again. Next time I’ll have a side of chili sauce for dipping. Or— maybe I’ll glaze everything with a chili sauce.

    The family was super stoked.

    And then the leftover uncooked ingredients went into the slow cooker—
    Chicken meatballs, daikon, onion, butter, garlic, ginger, pepper corn, juices from cooking the previous meal—

    No after pics cuz we crushed it. But that burner/wok combo was a revelation. I'd used similar banjo burners when I was younger cuz we boiled crawfish and whatnot but never with a wok, especially one as nice as that.

    Holy shit, for the first time in my adult life I had an honest to goodness surplus of btu's. I actually used the knob to control the flame, not just to turn it on or off.

    El Cholo Sonoran Turkey Enchiladas

    Modified the recipe from El Cholo restaurant in LA, left out the green enchilada sauce this time. It's supposed to be Christmas tree style w both red and green sauces. Also skipped frying the corn tortillas, and I'm not toping w a fried egg.

    I pressure cooked the turkey thighs in water w S+P, bay leaves, cumin, and an ancho chile which is not in the recipe. Removed the thighs and strained liquid and made the black beans w the liquid in the instant pot. Removed the beans from the instant pot and added finely chopped poblano pepper, garlic, cilantro, Mexican oregano, S + P (left out fresh tomato) and simmered to cook the poblano. Then added shredded turkey for a few minutes to reheat and season w poblano, etc.

    Assembly is sauce, a tortilla, black beans and cheese, tortilla and turkey, and another tortilla on top. Grated cheese on top after baking for a while. The sauce reduced quite a bit so it was picante.
