    Saag "paneer" and chana masala (with rice). Inadvertent vegan dinner - the saag used tofu roasted in miso and lemon instead of paneer and pureed cauliflower and almond milk instead of cream. Pretty awesome and healthy to boot, we needed something healthy after a day of munching on candy, ham and biscuits. (I should've taken a pic of the biscuits - they were cheddar and scallion buttermilk biscuits, came out great given that it was the first time I've made biscuits. I ate far too many of them.)

    As most of you probably recall, I can't do wheat. I rarely bother with gluten-free baked goods because they almost always suck. Recipes that call for low-protein cake flour are sometimes the exception, since they usually call for cake flour because you don't want gluten. Also, anything with lots eggs has potential since the protein from the eggs is going to be providing the structural integrity. So, when I found out that we had been asked to bring strawberries, whipped cream and angel food cake to the in-laws for Easter dinner, I figured GF angel food cake was worth investigating. Turns out Serious Eats has a recipe and it's outstanding, quite possibly better than the wheat flour version. Highly recommended if you're in need of a GF dessert or like angel food cake in general.

    We didn't eat a lot of cornbread when I was a kid since New Orleans is more about rice than corn. But I'll be damned, I love a pan of cornbread. Been using the Anson Mills corn meal, buttermilk, butter, egg, salt, and baking powder. Nothing else and the stuff is just awesome.

    Bibimbap! Homemade pickled carrots, daikon and cucumber, seared brussels sprouts with sesame oil and soy, kimchi, rice, and a runny egg. Been doing the vegetarian dinner thing this week, haven't really missed meat at all.

    I am so with you on the lacto pickle front. But I've got so much lamb marinating that I need to give it away.

    Relish, kimchi, daikon, carrots, kraut, esparragus, eggs, beets, cukes, peppers, garlic, cherry tomatoes... there is more, I'm sure.

    I shit well. As well as I eat. Enjoy. Holy fuck I've lambed myself! Didn't think that was ba ba possible.

    And my freezer is so full of elk, deer, and green chile, that it's an ordeal to open it.

    I remember distinctly the first time I had Bibimbap. Years ago. I road my moto up for Targhee bluegrass. I made a lifelong friend with that food booth. In many ways. And many others as well.

    There's a woman who sells damn good home made tamales at some of the metal shows in town. I had a drunken exchange of recipes a couple weeks ago but I haven't made any since then

    Nicely done! I've gotta start fermenting some veggies soon, I'm all out. I accidentally consumed my last jar of kimchi in an afternoon just snacking on it while doing yard work

    Love that pic. Those were some good Eiseman trips. Always remember the night before my first, getting shitcanned at your place and then having to drag ourselves up 7 miles hungover as shit, and you deciding last minute to join us for the skin up. Good times.

    There ought to be a separate cooking thread just for hut meals. There have been some pretty epic ones, made all the more incredible by the fact that we had to hike everything in and use a propane burner and/or wood oven to cook.
