This page has been really good. I scrolled through the page a couple times while eating my big bowl of tuna helper.

Uuuuhhhhhggg this what I wanted today!

But I didn't have any belly. I did have shoulder though, so I tossed it in the slow cooker and made carnitas instead.

But I didn't have the right fixins either so they were akwardly adorned with butter lettuce. Wasn't the same.

Hey that's my budget right now. Got to eat. Got to strech about 20$ into 2 meals a day per week. Tuna helper = 5$ for to full meals. Spaghetti's with meat Sause 3 meals for about 7$ and Taco's lots of taco's/ Oat meal/ Sometimes I splurge and have Bisketts and butter and Jelly for breakfast.

Things like having to buy more cat litter stresses me out.
But hey life is getting better. Unless the world ends I start working again Monday, I will get paid. And I will get on the Rayleys site and click buttons and have a few hundred in Steaks and shit dropped on the porch. "Like it used to be"

In the meantime, I get to look at the very cool food posted here and dream while I eat what I can to get by.

In a large metal mixing bowl combine 3 tbs cornstarch and half a cup of cold water. Place the bowl directly on a burner on medium to med-high heat depending on your stove. Whisk continuously until the mixture just thickens. It will look about like cream cheese frosting. Whisk in 1 tsp baking soda, then add your raw fries and mix until they're fully coated in the cornstarch glop.

Arrange in a single layer on an oiled baking sheet and bake at 450* until the bottoms are browned, about 35-40 minutes for me but YMMV. Flip and cook about 15 minutes more until fully brown. Season as desired.

About half an inch is the optimal thickness to slice the potatoes. Four average size russets will fill one standard half sheet pan. To make extra sure they don't stick, give the pan a quick spray with cooking spray, let sit 5 minutes, then add 2 tbs oil and brush to distribute evenly. The lecithin in cooking spray bonds the oil to the metal.

It's some extra work for sure, but the results are worth it and you can do it all in the time it takes for the oven to pre-heat.
