    Crab Cakes - here in metro nyc most of the crab meat available is from Asia, nothing against it but when a jar of jumbo lump comes through from Maryland- it’s just game time. Night n day.

    Yea, chili base, then cheese, then box corn bread poured on top. Foil cover and about 30-40 mins later your good to grub. Works in an oven too, only takes about 20 mins that way.

    And whiskey bong...good idea!

    Those crab cakes look bomb and I would eat every one you put on my plate. That said, doesn’t that mask a lot of the flavor of the crab? I tend to eat a lot of things straight these days. Meat over here, peppers over here, potatoes over here veggies over there. I still do green chili, chicken soup, and beef stew. But if having a treat of rare crab I’d be inclined to eat it straight. Maybe even raw depending. Light steam maybe.

    ^^^^I go through the same conundrum when crab is around. A well crafted crab cake is almost all crab and can be amazing, but I only make them when for some reason there's more crab than I can eat straight in one sitting.

    following the recipe I've always used on the cakes its pretty basic. Start with the best crab I can find - always been jumbo lump from the Chesapeake - crazy where price is now - used to be in high teens for a container - now encroaching on 50...

    its tempting to hit it right out of the tub....

    but
    I try to be as simple as possible
    salt
    pepper
    old bay
    parsley
    egg white - no yolk
    mayo
    crushed saltines
    mustard seed
    mix it up -
    just enough to keep em together in the fridge for a while.
    bacon fat and butter in the pan

    roll em in more crushed saltines - cook em up

    coldest beer you can have in a frosty glass with some home made tartar sauce - its pure heaven.

    better the crab the more the taste shines through.

    must say I'm intrigued on the maine angle now though.
