    Smashburgers tonight, loving the Blackstone. 3oz loosely balled 80/20 ground sirloin, smashed onto a hot griddle. Parchment paper makes it a lot easier, no sticking to the press.

    Souvide a thick bone in chop, then stuffed it with some sausage, apples and onions. Quick cast iron sear for a perfect medium. Homemade stuffing with some admittedly, overcooked asparagus. Not bad for a quick 25 minute meal. Click image for larger version.
