    Both were tasty, but the gorgonzola one was the definite winner. Not sure the juice was worth the squeeze on the mozz one.

    Although I will say, the marsala syrup was *fantastic* drizzled on the chicken breasts. No photos 'cause I was busy eatin' and drinkin'.

    I'm ridiculously picky when it comes to curry. I have tossed out so many meals that I spent literally hours preparing because something wasn't quite right. That guys website has been a major breakthrough for me, it's an absolute treasure trove of knowledge.

    That said I'm still trying to get a more tender chicken, last night I used breast and it was way too tough.

    Ya, those curry dishes are way tastier with thigh meat. I usually use breastses because my wife wants it to be lean, not tasty. And I can rinse and cut up a couple breasts with a pair of tongs and my fancy kitchen shears without getting my hands dirty a lot easier than I can do thighs.

    I usually go with thighs but am trying to mimic my favourite local restaurants version where they use big chunks of really tender breast meat.

    Stewing it will just dry it out, there isn't enough connective tissue.

    X2 on using a brine.
