    Defrosting a few lbs of stew meat/soup bones - what should I make? Thinking hearty winter food - goulash, beef stew, etc. Any favorites?

    If you're making beef stock and then a finished dish, perhaps beef pot pie or a braise w gravy to serve over mashed potatoes or egg noddles. Rosemary stew is a bit out of the ordinary.

    When I have the presence of mind, I cut stew meat into chunks, freeze them on a sheet tray, and then bag them. That way they can go straight into the instant pot frozen. This is about the only damn thing that fucking counter pig is good for.

    Dates have a very fascinating cultural significance in Iraq.

    One more fact fact about it for today: Mohammad broke his Ramadan fast with a meal of dates and water, so during Ramadan, Muslims will eat a date before they break their fast each evening.

    Ended up making goulash with the beef. Slow cooked for 5 hours, bones in the pot.

    I've been doing DTM's potatoes a lot lately but I decided to mix it up with Kenji's potatoes - par boiled and then roasted in bacon fat.

    Got a lionshead mushroom growing kit for Xmas and harvested the last shroom on it. Battered and fried it into Lionshead Parmigiano.

    You can get that kit to flush again, all you need to do is likely dunk it in water overnight and set it out again.
