    Watcha cookin'?

    make yourself some hot honey - 1 part each honey, chili flakes and/or chili powder, and apple cider vinegar

    made these with flakes and powder - the one with the chili flakes I blended, but the other I just mixed in the jar

    So, not cooking but this seemed the best place for it.

    My weird low carb antipasto type dinner. There's a farm stand just down the road from my new place and their tomatoes have been amazeballs. The star of the plate.

    Chuck pot roast. Marinated in "Korean BBQ". 3 hours at ~275 uncovered on a indirect grill. 3 more hours covered with water in pan then about 20 minutes at ~350ish. Was 203 to 209. I've read it could stand to go to 213. Rested for 25. It wouldn't shred super easily, but could have if I wanted to. Thin sllced across grain with some fat separated pan liquid added back to the serving platter. Served with an Asian sesame cabbage slaw on grilled to heat corn tortillas for some fusion action. No pics of the serving or eating.

    What's your recipe and cooking method? I have a good pressure cooker barbacoa recipe but always looking to branch out and improve.

    Per usual, I just googled and used a couple of recipes as a guide.

    I think I ended up using:
    -4 cups beef broth (recipe called for chicken broth)
    ~1/2 tsp clove
    ~couple of tbsp oregano
    ~ 1 tsp cumin
    ~ 1/2 cup apple cider vinegar
    -6 cloves of garlic
    -2 bay leaves
    -one small white onion
    -one small can of ancho chili in adobo sauce
    ~4 dried chili negro (reconstituted and deseeded)

    Chunked and seared the meat with s&p.

    Blended the chilis. Probably could have blended the garlic and spices in there too, but didn't.

    Threw it all in the slow cooker on low for about 9 hours.

    It was a touch on the spicy side, but not too bad. Spice weenies may have thought it too spicy, but it was good for us. I may deseed the canned chipotles next time if making it for company.
