    Yeah, my understanding is that OG birria is goat, but maybe that would scare the NYT readership. Plus beef is more readily available at the Lakehood Whole Foods

    Notes for the future
    - Put more sauce than I thought would be needed inside (rather than as a dipping sauce)
    - Half-cooked tortillas are a major upgrade over regular, and a time-saver vs full DIY. Iíve seen them at Costco on-and-off and at Whole Foods yesterday
    - More cheese and more salt, obvs

    Yes! Iíve been doing an overly-complicated chicken noodle soup lately, and the thought of DIY noodles did not occur to me. Thanks for the suggestion!

    Pre-pandemic, the local food hall had a Thai stall that served a delicious Waterfall Pork. Theyíve since moved on to a fancier food hall in a hipper part of town (Zeppelin Station in RiNo Denver). During peak COVID I wanted to re-create it and it just so happens that Bon Appetit profiled the original restaurant that spawned the food hall stand and has the recipe online here, so now itís in our semi-regular rotation.

    They also have the recipe for their similarly awesome (although very differently flavored) beef panang curry, which Iíve made weeknight-friendly by using canned panang curry paste (Maesri brand) and quick-cooking beef cuts.

    Dinner last night. Polished off for lunch today.

    Pan seared pork coppa steaks. Finished in the oven. Very simple. Sea salt, black pepper and a light rub of mustard and a smoky hot sauce.

    Made a pan sauce with bourbon, shallots, garlic and parsley and thyme. Roasted asparagus with lemon zest and siracha as a side.

    One of my favorite dinners.
