    Pre-pandemic, the local food hall had a Thai stall that served a delicious Waterfall Pork. They’ve since moved on to a fancier food hall in a hipper part of town (Zeppelin Station in RiNo Denver). During peak COVID I wanted to re-create it and it just so happens that Bon Appetit profiled the original restaurant that spawned the food hall stand and has the recipe online here, so now it’s in our semi-regular rotation.

    They also have the recipe for their similarly awesome (although very differently flavored) beef panang curry, which I’ve made weeknight-friendly by using canned panang curry paste (Maesri brand) and quick-cooking beef cuts.

    Dinner last night. Polished off for lunch today.

    Pan seared pork coppa steaks. Finished in the oven. Very simple. Sea salt, black pepper and a light rub of mustard and a smoky hot sauce.

    Made a pan sauce with bourbon, shallots, garlic and parsley and thyme. Roasted asparagus with lemon zest and siracha as a side.

    One of my favorite dinners.

    Birria is usually sheep (my favorite), but sometimes goat or beef. I really like when birria places ("birriería") have broth, they give you a steaming bowl of the broth with some minced birria meat in it, you put some diced onion, hot sauce and a squirt of lime juice. Delicious!

    But here's what we just had for salad today: beets, apples and fresh fava beans, with a vinaigrette and a squirt of lime juice. Simple, but really good.

    A few years ago I made up this masa flatbread that is super tasty and easy to make. I'm not aware of anything quite like it. Hydrate 2 cups of masa flour 1:1 for 20 minutes along with 1 tsp kosher salt and 0.5 tsp garlic powder. Press out the masa dough evenly across a well-oiled sheet pan (it won't seem like enough at first, but it is). Put the pan on the grill on high-ish heat until the bottom is browned, about 15 minutes, then flip and cook about 5 more minutes until the other side is brown. It ends up about 1/8" thick and crispy but with a nice chew.

    Gluten free matzoh! Looks like it would be great to make chilaques with.

    Chopped figs and walnuts. Looks great but went straight into the trash. Overwhelming ammonia after baking even though it was within date. A lesson in eating brie while it's young.
