    I have been thinking about it or elk, but it really does touch the edges of my experimentation sense. I keep holding off on pulling the trigger on some koji, I sure as shit ain't making it in my environment.

    I've got gallons of kimchi, kraut, mustard, ketchup, pickles, eggs, and who god knows what else, but garum works me mentally.

    We need a ferment thread. Maybe I'll start one, in a few months ;?)

    Thawed a small brisket flat. Wouldn’t do it with a point but given my busy Sunday I sliced and slow cooked instead of a trad bbq brisket.
    Well shit. It was a hit and I have to admit, pulled beef was the answer tonight.

    Sliced about 1.5” slices
    Coarse sea salt
    Sear
    Toasted: cumin, paprika, herbs.
    Maybe a 1 cup of homemade beef bone broth
    Sweet onion
    Celery
    Scallions
    Coconut aminos
    About a bulb of chopped garlic
    Tossed in the slow cooker.

    Turned out fucking beautiful. One kid had in a burrito. Other in a sando. Wife.... she passed as she isn’t a fan of pulled meats, (I’ll never understand ). Me = mtn of beef, hot sauce, sautéed bell peppers, guac and a little goat cheese.

    Too warm, and you let o2 in. Keep it sealed and under brine and you'll be fine next go. Also, perfect hygiene on glass before starting. Use and airlock, or make sure your crock's water lid is always full of fresh clean water. Save a cabbage leaf to cover the kraut, never check, and just keep air out of there.
