    This was a hit; but didn't do sandwiches...just quartered chicken

    No need to double the sauce if you make more than one chicken; it makes plenty of sauce... if you go three chickens, double the sauce.

    3lb pork coppa roast
    Big green egg for the cook.
    Apple chucks
    Reverse sear
    Took it to 126 around 270*.
    Rubbed a few hrs before:
    Ground some fennel seed
    Dried thyme
    Kosher salt
    Pepper
    Finely chopped fresh rosemary
    Paprika

    Good eatin!

    Believe me, I am with you. In our experience the spoon gets tossed aside because it just isn't up to the task. It is hard to slow down the animals in full on feeding frenzy. I found a pair of fancy tongs I use for the cheese. Those tongs are referred to as the "Donald Trumps" in our house. Fancy grabber, get it? I know.... Polyass. Laps.
