    I've exploded two and dropped a third. Nice stuff, but I'm apparently too rough on it.

    Going to a party today with a Mexican theme. Asked to bring something small. I figured why not carnitas. At home I'll crisp them a bit more but due to them travelling and will sit a while I didn't crisp as aggressively.

    All that work and our old waffle iron was not quite up to task. Got some caramelization but too much unmelted pearl sugar and couldn't go longer without drying them out. Having a deeper (and hotter) waffle grid might have helped.

    I have found my Perry goes really well with pork chops. May try this only substitute Perry for the wine.

    Dungeness crab with spicy garlic butter, homemade sourdough, and a kale, beet and goat cheese salad.

    This cheese cake recipe has never failed me from the first time I made it which was the first time I've ever made a cheese cake. (note: it is not like German Chocolate Cake. Just uses Baker's German Chocolate):

    German Chocolate Cheese Cake


    Filling:
    12 oz Baker's German Chocolate
    2 8oz pkgs cream cheese cut into 1 in chunks
    2/3 c Light Karo Syrup
    2 eggs
    1 1/2 tsp. Vanilla
    1/3 c whipping cream

    Crust:
    1 3/4c chocolate cookie crumbs (Oreo cookies work great - split, place cookies wafers in a ziplock bag, crush with a rolling pin until the consistency of sand.)
    2 tsp sugar
    1/3 c melted butter

    Mix crust ingredients together in 9 inch spring form pan and press to form.

    Instructions:

    Melt chocolate in microwave or dbl boiler until smooth and even.
    Combine Karo, whip cream, eggs and vanilla in food processor and blend until smooth. Add chunks of cream cheese with the food processor running. Process until smooth. Slowly add melted chocolate until smooth and consistent. Pour into prepared pan and bake at 325 for 45mins or until set. Cool and chill in refrigerator.

    I like to top it with white chocolate dipped strawberries but it's lovely on it's own.

    To dip the strawberries I melt white chocolate, dip the ends and place the berries on a parchment lined plate or cookie sheet then chill in the refrigerator until set.

    what haven't I cooked should be the question. Since yesterday I've cooked/baked:

    rugelach
    ginger bread cookies
    meringue cookies with pecans & choc. chips
    Chex Mix
    Muffins (Bran with cherries & raisins)

    on to:

    Wild Mushroom Lasagna and Breakfast Strata with monterey Jack, sausage & mushrooms. Then I can quit for a while.
