It's a personal thing , but when I don't have anything in the crock fermenting, I feel empty, gone, and useless. Like I left a log on the fire and didn't enjoy its warmth.
Turmeric green onion black pepper pineapple poblano kraut. 2% brine.

Yeah, my understanding is that OG birria is goat, but maybe that would scare the NYT readership. Plus beef is more readily available at the Lakehood Whole Foods
Notes for the future
- Put more sauce than I thought would be needed inside (rather than as a dipping sauce)
- Half-cooked tortillas are a major upgrade over regular, and a time-saver vs full DIY. I’ve seen them at Costco on-and-off and at Whole Foods yesterday
- More cheese and more salt, obvs
