    Watcha cookin'?

I have 2 of these lodge griddles. I'm into them about $15 each from 2 different thrift stores. I bet they make great "smashburgers," but I wouldn't know because burgers are meant to be juicy.

That thing is pretty cute, you can fit two whole sandwiches on it?? My 36" Blackstone will going out to my property for fish camp. One of those little griddles would only take a few hours to feed 7-8 people.

Last night we had mashed sweet potatoes and I made compound butter to finish; garlic, roasted jalepeño, cilantro, a pinch of ground coriander and cumin seeds.

Tonight I cooked salmon filets and a late season crabcake, afterwards we have run through the half stick of compound butter. This is how the holidaze sneaks up on my waistline.

Made some carnitas tonight following this recipe by Kenji. I highly recommend this method.

I went light on the orange and cinnamon based on the reviews. I'd add more next time. I also tossed in a bunch of ground cumin and a bit of chili powder.

Served it with pineapple salsa, guac, beans and pickled onions. The tortillas were fresh from a local Tex Mex place. Yes they were flour. But, degenerate children.

Advancing Turkey dinner. Sous vide-ing one small heritage bird locally sourced, and smoking another one. Broke the sous vide victim down and bagged. Roasted the carcass with onions for stock, roasting pan deglazed with wine and reduced, which will be reserved for gravy later.
