    What's up with people not grilling year round? I live in VT and I use my grill all winter. Granted, I don't do pork butt or any long slow grilling of large meat until it's warm out. My 3 burner Weber just can't pull that off easily.

    But it's spring now.

    Do I need a permit to mark the season?

    Yup, lamb chops. The onion slices are relatively small.

    But the lamb is oh so tasty. Once our rosemary recovers from winter, I'll grill the lamb with that.

    Had a 2016 Ambroise Vosne Romanee Damaudes with it, a dusty, formal french pinot.

    I was so hungry by the time it was plated that I just inhaled it. But, had a leftover chunk that I sliced up as a cold cut appetizer last night and it was still awesome.

    Also, after killing several cheap grill thermometers, I splurged and got a Fireboard 2. I'm obviously not a food professional, but I liked that it syncs with Google Home. However, I'm realizing that the perfectionist side of me is going to have a hard time not obsessing over all the new data.

    Lamb Ragu from last night is so good that I keep eating the cold, leftover sauce straight from the fridge. Ground grassfed lamb from my local guy, rendered pork fat, Italian soffritto, spice, red wine vinegar that was allowed to slightly oxidize when the grapes originally fermented, the last two cubes of tomato paste from this past year, homemade chicken stock, and heavy cream.

    I included some toasted spice-blend made for a previous tomato dish, fenugreek, paprika, coriander, cinnamon, and clove. That plus a dusting of fennel pollen at the end really made the lamb shine.

    I haven't cooked like this in years but cooking/eating meat again has been fun. I adapted Alice Water's bolognese recipe, which calls for whole cuts of meat in addition to ground meat, do any of you do that as well?
