    Gonna go back to roasting a spatchcocked turkey this year - rubbing it with porchetta spices and making a rosemary gravy with it. Sausage, sage, chestnut and apple stuffing (made in the slow cooker) and Sichuan dry-fried green beans to go with it. But the best part this year is that I'm making Dutch bitterballen as an appetizer (deep-fried beef gravy balls). Looking forward to eating too much and then having some Fernet afterwards.

    I had bitterballen for the first time in Amsterdam last month. Such a great drinking food!

    We are going to a house that is serving a rib roast for Turkey Day tomorrow. My kids wanted turkey and gravy....me too. Nothing wrong with a good beef roast but why not cook up a bird too?
    Early thanksgiving bird:


    Pork belly that I cubed, seasoned and smoked. Currently back on the grill ina covered roasting pan getting good with some bourbon, brown sugar, honey and some hot sauce I made a couple months back. Will glaze in another hour with whatever I dream up...something garlicky with some more heat.

    Over easy is great. I do prefer a Sunnyside up, but it has to be done right, not rushed. Runny yolks rule.

    That’s my buddy Holy Mazurkewicz and his kielbasa machine. Owen was pretty helpful trimming and grinding.

    We are going to do a 100# batch next weekend. I like his gramma’s Polish kielbasa recipe, but I’m wanting to do something spicier next time around.

    Leftover stuffing and mashed potatoes. Mix thoroughly. Fry in butter until well crisped on both sides. Serve with gravy/eggs/both.

    I can't take credit for this idea, it came from pegleg, but stuffing in the waffle maker was revelatory. Mashers in the waffle iron was also good.
