    I'm going to posit that the small quantity of oil wasn't the problem, but rather that improper pre-heating of the pan was to blame. You can get away with small quantities of oil in SS frying pans (particularly if they're Silvinox-treated), but you need to heat the pan until you can produce the Leidenfrost effect with some drops of water prior to adding oil or food to said pan. This will greatly reduce sticking.

    Lastly, live a little, cook those taters in ghee.

    Nailed it. We don't bother with non-stick pans. Only SS pans. No sticking problems. Was a bit of a learning curve admittedly. It's all about hitting the right temps for sure.

    I'm using more cast iron and less non stick, when it starts to smoke thats the right temp


    My father told me they couldn't find a decent cook for the police officers mess in post war Singapore, they finally found a really good cook but unfortunatley had to fire him when they realized the reason he was so good is that he would spit on the grill to tell when it was hot enough to cook

    Everyone spits on the griddle or the frying pan--you want to see the droplets dance. There is nothing in spit heated to frying pan temps that will hurt anyone.

    Cook your hashbrowns in the waffle maker. Tell yer wives to do the same.

    Melt a few tbs of butter and mix in with the grated potatoes really well. Add salt and pepper and maybe a little cheddar cheese to make the hashbrowns stick together, then throw on to your waffle maker at the darkest setting.
