    Cran: easy. Simmer crans with maple syrup, lemon zest, s&p, garam masala, and add in fresh mint at the end. That's a solid 22 oz. right there.

    Stuffing: saute celery onion shallot mushrooms and fennel in a shitton of butter and some olive oil. Add to said smash fest, with stock and beaten eggs. Of course, lots of parsley, sage, thyme. I don't like rosemary. Put outside to chill for oven duty manana.

    A solid 6 hour effort for tomorrow. Just left is my turkey which has been brining for 2 days, veg side, and taters. Manageable.

    I feel almost silly cooking for 2, but, it is worth it, and I am thankful. Posting 99% so I can just blindly search this in the future.

    Had to season and roast a Turkey with no salt today. Compensated with lots of garlic (under the skin) sage, onion powder, poultry seasoning, white pepper, black pepper, Mrs. dash, and a few other things.
    We shall see how it turns out. There will be salt on the table, thank goodness.

    Frozen turkey purchase was done on Sunday and just slid into the refrigerator. Last night to be safe, I pulled it out and stuck it for a bit in a water bath in the sink. Then back in the refrigerator for over night. Today after I got up I did some stuffing. Breading, some butter and a bit of margarine because I did not have enough butter out of the freezer. Chopped up some celery greens, leaves and smaller ends of the stalk. No onion in the house though. So did parley, some onion salt, poultry seasoning, and cloves cooked up on the stove. Potatoes peeled and in the pot waiting to be stuck on the stove.

    Turkey washed and stuffed with some seasoning and just going into the oven now...

    First year without my Father, he was never a turkey fan and had a story about a turkey sandwich the day he got married. It was coming up on lunch and someone asked him if he wanted a sandwich before heading to the church and all. Do not remember if it was his cousin that was best man or whom, but his Mother was in on it some how also. The turkey sandwich was a paper napkin soaked in water and put between the slices of bread. He told the story many times that it was the moistest and best tasting turkey sandwich he ever ate....

    Tracked that brand down and they do sell them here locally at the holidazes. Might try to grab one tomorrow, if available.

    We had a wonderful Thanksgiving. I hosted and my brother, who is a chef, cooked dinn. So he is not a dog owner and left giblets in a trash bag on our porch
    Just after dinner we catch Baxter trotting through the house all proud and after a sec realize he broke into the giblets and is carrying the turkey neck through the house

    Did the roast turkey breast. Came out good, except when I took the temp it was around 140 so I let it go another 10 minutes, and in that time it rocketed to 165, so it still was dry as hell even though I was sitting to pull at 150 or so. Fuck. Good thing I could smother it with gravy.
