    This is where I typically tout the benefits of a deep fried turkey, but we’re changing it up this year. The past two years have been bad news for a bunch of reasons. We didn’t eat until almost 8 last year. It was a quick, tense meal that was capped by my dementia addled mom declaring that the whole thing “blows goats”.

    This year, we’re changing the venue and letting Whole Foods do all the cooking. I’m beyond excited.
    Remind me. We'll send him a red cap and a Speedo.

    I'm picking up an 18 lb. fresh bird on Tuesday. Cutting it in half, brining one half for the smoker, the other half will be disassembled for sous vide (self-brining). Did this combo last year to rave reviews.

    Smoke recipe pretty typical. Brine overnight, simple s&p rub, smoke at 250-ish until done, probably about 5 hours.

    12 lbs turkey will be spat choked and get the dry brine treatment tomorrow and sit in fridge for 20+ hrs... Will be smoked in the Big Green Egg at 350 degrees and pulled at 160... Never let's me down and so easy...!

    Double batch of creme Brûlée made.
    Chocolate chip meringue cookies made.
    Turkey stock 14 hr simmer and jarred up.
    Two guest rooms cleaned and prepped.
    Dark bits of half the bird going into it's 24 hour bath shortly.
    Vacuumed, blahblahblah.

    Sides are tomorrow's tasks cuz they'll turn brown if I do my mis en place now....
