    There are two types, some are ripe when soft, the others are ripe when still a bit hard. The ones that need to be soft are completely inedible when hard.

    The fuyu persimmons that are ripe now are the type that are good when firm. I've never cooked with them, sometimes I remove the peel because it can be tough.

    Juiced out the last batch of pears for my hard Pear cider, the few remaining will still get juiced and frozen for back sweeten when bottling.
    watch out for snakes
