    FYI to fellow hot sauce guys: my wife gave me a year of Fuego Box for Christmas, and it was one of the best presents anyone has ever given me because 1. it showed that she actually knows me (unlike my parents and half of my siblings), and 2. it was really good. None of them really blew my mind, but there weren't any duds either.

    really hot and no flavor are great for adding heat to liquids (soups, bloody marys, etc) where you want something that only adds heat. Not so great on solids.

    Can I seriously teach you boys how to ferment and make your own hot sauces and ketchup? It's not that hard, it just takes a month or two and some fortitude. And it's better than anything you have ever had commercially.

    I have to say this shit is legit. I've got a gallon I need to make of my wild mild green hotsauce, but I marinated some scored chicken breasts and cubed potaters on the grill during a break yesterday and fed 5 people and it was fucking amazing.

    I don't have the skills yet to replicate it, but I've got an aji amirillo one down which I haven't done in awhile.
