    Already ate the ground beef in meat sauce.

    I just wrapped a pound of bacon around fresh pineapple. It came out pretty good. Could have cooked it hotter or longer or something, idk. And I don't have a rack.

    I went a few years not eating dairy, and I still try not to eat too much, but I never liked being "that guy".

    pretty sure i ate 7 animals yesterday. lets see. shredded bbq beef bbq sammy. shredded pork bbq sammy. three diff kinds of game sausage. smoked trout cake (think crab cake). and a couple tuna melts.
    also got a fairly BA new all leather softball glove.

    I froze the pot roast since I didn't know when I was gonna get to it.
    While still frozen, browned it and put it in a crock pot. 1 jar of tomato sauce, some carrots, celery, spices. Left it on low over night.
    Wow. You can practically eat it with a spoon.
    Eating some now over instant mashed potatoes and peas.

    And no, the red meat doesn't make me tired. It makes me feel like fucking, or killing everything in reach. Like good music.

    Don't worry, the dog is safe. He's also always ready to fuck or kill everything in reach. Or at least chase sticks and run with me on the bike.....and hump all the male labs.

    I think FHV's posts make it perfectly clear that she's the one who needs to get up to speed. You can't argue from ignorance and expect anyone to listen.     My anti-vegan offering this week is Drunken Shrimp

    Start with what the store called "Super-Colossal Shrimp"
    Marinate for an hour in a 50/50 mix of Tequila and Lime juice, with Jerk Spice. Rum works well too.

    I ate some whitebait in a salad today. The fish were so small they surely must have died the moment they were born. You could still make out their little eyes though.

    Went to a local restaurant last weekend with the wife. Amazing menu, almost all sourced locally. I ordered a hard cider, and they brought me a mason jar filled to the brim...nice touch.

    We had:
    - Deviled Eggs with bacon
    - Spicy sausage with a maple syrup aoili
    - Corn fritters with VA ham
    - I had pork belly that was ridiculous. So fatty and tender.
    - Wife had an 11 oz burger made with local beef, shitloads of bacon and an egg over easy on top. I don't know what he did to it, but this was no regular burger. It was insanely good.
    - Dessert was chocolate chip cookies with bacon and Heath bar pieces and a shot of whole milk. I haven't been eating wheat, so I was just going to have a bite. I got a taste of the bacon and it was over. I scarfed the cookie and got my hand smacked reaching for hers.

    Finished the night with SuperClaw, which was hilariously awesome.
    Remind me. We'll send him a red cap and a Speedo.

    This week's submission - smoked pork shoulder

    You need:
    - about 2 lbs of pork shoulder per person. I prefer boneless
    - Dry rub (see below)
    - A smoker. Mine is a Brinkman electric for ease of use
    - Wood chunks. Using hickory for this adventure
    - side dishes - cole slaw and Walla Walla sweet onion
    - sauce (see below)

    My dry rub was a combination of kosher salt, coarse ground black pepper, paprika, dry mustard, brown sugar, cumin, jerk spice, a ground up dried chipotle and a ground up dried chile negro.

    The night before
    - Put the dry rub on the shoulder, wrap in cling wrap and refrigerate.
    - put the wood chunks in a bucket of water

    Next morning
    - Put the wood chunks into the smoker
    - Fill the water basin 2/3 full with water and a can of frozen apple juice concentrate
    - put the unwrapped pork shoulder into the smoker
    - turn on the smoker

    Go for a bike ride for at least two hours, not including time to and from trailhead

    When you return, check the temp of the pork and add wood as necessary. Don't check temp more than once per hour

    Once the meat temp >130F, add a peeled onion. Onion should be cut in half half-wrapped in foil and slathered in olive oil

    Make the sauce. I used Ketchup, cider vinegar, a ground up dried chipotle, brown sugar and a little mollasses. Put everything in a pot and simmer for an hour, then turn off the heat.

    When meat hits 175F, remove everything from the smoker. Let the meat stand for 20 minutes then shred. When the onion cools, slice into rings.
