    U can also dry them by squeezing them into a ball of cheesecloth twisting the end or also spread them ona plate and microwave briefly.

    Goy boy toy here, my wifeís Jewish family have me on lifetime latke duty, though Iím not sure to this day if itís because they like my cooking or a long con to get me to do all the hard work. Regardless I enjoy it and have had years to experiment and perfect.

    I learned to heavily salt your shredded potatoes (1/4 cup for 10 potatoes) as it draws out a ton of moisture. Let that sit for 15 min, then hand wring a small handful of potatoes at a time, itís amazing how much liquid you get out. Then mix in your egg, matzo and spices.

    Also I like the deep fried cooking method better, big bottle or 2 of vegetable oil in a wok works for 7-8 at a time. Cooks through better, and I think they end up less oily.

    For those on the eastern seaboard north of DC the GPOD brand is what you want to seek out for the holidays (and all the other days, too.) It's a very popular brand around Passover every year as well. Every carton shipped is marked w the OU. The Russet Burbank variety has a lower moisture content so it doesn't require as much effort in prepping and tastes better as well. Enjoy!!!

    Iím serving my latkes with sliced pork tenderloin with rosemary pan juices, and starting off with oysters on the half shell and a dungerness crab cocktail.

    After dinner, some kosher weed.
