U can also dry them by squeezing them into a ball of cheesecloth twisting the end or also spread them ona plate and microwave briefly.

Goy boy toy here, my wife’s Jewish family have me on lifetime latke duty, though I’m not sure to this day if it’s because they like my cooking or a long con to get me to do all the hard work. Regardless I enjoy it and have had years to experiment and perfect.
I learned to heavily salt your shredded potatoes (1/4 cup for 10 potatoes) as it draws out a ton of moisture. Let that sit for 15 min, then hand wring a small handful of potatoes at a time, it’s amazing how much liquid you get out. Then mix in your egg, matzo and spices.
Also I like the deep fried cooking method better, big bottle or 2 of vegetable oil in a wok works for 7-8 at a time. Cooks through better, and I think they end up less oily.

For those on the eastern seaboard north of DC the GPOD brand is what you want to seek out for the holidays (and all the other days, too.) It's a very popular brand around Passover every year as well. Every carton shipped is marked w the OU. The Russet Burbank variety has a lower moisture content so it doesn't require as much effort in prepping and tastes better as well. Enjoy!!!

Sure, it's not exactly the season but I had a great make session. I used the NYC nosh recipe (below) presented on page 1 of the thread by deadmonton. I've used this recipe before and loved it.
Coupla things I did a little bit different this time:
- added a cooked sweet potato and about 3 cooked carrots to the mix (I made 3x the amount of potato so it wasn't a lot in the grand scheme). It added some nice colour to the latke.
- added about a half cup of dried parsley (previously taken from our garden).
- added about a quarter cup of roasted garlic (shredded fine).
- cooked them in homemade schmaltz (turkey and chicken)
All the stuff above was kicking around and I like to use up stuff. I let them cool/drain on the rack before placing on the paper towel.
Results were very very good (if I do say so myself).
Mind-blowing Homemade Latkes
2 3/4 lbs. (1.25 kg.) white potatoes (about 4 medium potatoes)
1 large onion
2 eggs, well beaten
1.5 Tablespoons matzoh meal (or flour)
1/2 teaspoon salt
1/4 teaspoon black pepper
Peel and cut half of the potatoes into one-inch chunks. Boil in salted water until tender (about 20 minutes). Drain and pass through a food mill (or process smooth in a food processor). Sprinkle matzoh meal on top of this. In a large bowl, shred one large onion. Then shred both peeled potatoes into the onion, mixing together the potato shreds with the onion to keep the potato threads from discoloring. Squeeze as much liquid as possible from onion-potato mixture by placing the shredded vegetables into a piece of cheesecloth and twisting until no more liquid can be extracted. Return to large, dry bowl and add egg, pepper, and salt. Add the puréed/milled potatoes to the shredded potatoes and combine thoroughly. Form into palm-sized patties that are about 1/2 to 3/4 inches high. Fry these patties in 1/4 to 1/2 inches of corn oil (do NOT use olive oil) . The patties will need to cook for about 5 minutes on the first side, so if they do more than go slightly brown after a minute or two, your oil is too hot. Flip after five minutes with a spatula and fork and cook on the other side for about 2 minutes, or until dark golden brown. Drain thoroughly on paper towels. Serve with applesauce, salt, and sour cream. Makes approximately 10 latkes.“I tell you, we are here on Earth to fart around, and don't let anybody tell you different.”

Thanks mate, yeah loving the kitchen reno! You coming up for a ski this season? A bit chilly up here these days. Hill closed today and friday unfortunately, hopefully open saturday. Conditions are pretty good considering (ask tri-ungulate haha).
Made another batch today. Variation was that I grated a bulb of garlic (6 cloves), a bit of zucchini, some yellow and red pepper into the raw potato/onion mix before the cheesecloth squeezing phase. Added a half cup of fresh parsley just before forming the patties. Worked great. Served with fried tomatoes and some sourdough missus GfT made.
