It just dawned on me--I have apples. I can make applesauce, the way my Bubbe did. If only I had the time . . .

I did it in a pressure cooker last night, took no time to make applesauce. The waffle latkes were decent but I didn't get enough of the crispness from frying, I'll have to try again.

My first batch tonight fell apart, next round had more matzoh meal and egg...much better. However, the first ones tasted just like Waffle House hash browns with onions...not necessarily a bad thing.

Foolproof simple latke recipe from my great-aunt Ceil
4 peeled, grated, drained potatoes
2 eggs
1/4 cup flour
i grated onion, drained
Mix
fry in oil.
The key is the grating and draining. If you just shred the potatoes they retain too much moisture. I use the grating blade of an Osker Jr. It makes a mess.

I'm thinking too much water in them, but I've never tried.

My Aunt Ceil's recipe is authentically Jewish and has been in the family for at least 100 years and probably much longer--probably came with my great-grandparents from Russia in the early 20th century.
(My goyishe wife knows more about my family history than I do--she did the geneology thing one year. But no records from the old country except for a few remembrances and of course by the time we were old enough to want to know more all the people who could have answered our questions were long dead. Some relatives of mine went back to my father's ancestral village in Ukraine some years ago but there was nothing left. For most US Jews our family history basically starts when our ancestors set foot on American soil. Unlike the Irish and Italians and others we have no fond memories of the old country. Fiddler on the Roof is a grossly sanitized (how's that for an oxymoron) version of how bad things were. Better forgotten.)
