After a few requests, here is the girlified Chili Verde Recipe I used (adapted from Rachel Ray's Classic 30 Minute Meals):
Ingredients:
Olive Oil
1 package ground turkey breast
2 1/2 T ground cumin
2 T hot sauce
salt and pepper
1 jalapeno (or hotter chile if you liked) seeded and chopped
3 cloves garlic, chopped
1 small onion, chopped
1 small zucchini
1 small green pepper
12 tomatillos (I use a can because it's easier)
1 can pinto beans
optional: fresh thyme and cilantro to taste
1-2 cups homemade chicken broth or a beer depending on personal preferences
garnishes:
scallions, cheese, avocados, cornbread
Heat a skillet and add oil and turkey. Season with cumin, hot sauce, and salt/pepper. Start to brown and crumble the turkey and add chile, onion, and garlic. Chop and add zuke and bell pepper while the rest of it cooks.
Let it all cook while you chop tomatillos. Stir in the tomatillos, add cilantro and thyme, if using, and add the beans. At this point I add either broth or beer. Simmer covered for 5-10 minutes, adjust seasonings, and eat with your favorite garnishes.
