Rhubarb...ideas?
So I'm about to embark on the first great rhubarb harvest of the season and I'm looking for ideas.
The standard rhubarb crisp, pie and just stewing it with strawberries are fine but does anyone have other ideas to deal with a lot of this stuff?
Beverages?
http://www.hendricksgin.com/us/cockt..._SpringTao.asp
1¼ oz. Hendrick's Gin
1¼ oz. fresh grapefruit juice
½ oz. simple syrup
4 small pieces fresh rhubarb
Muddle the rhubarb and the simple syrup in the bottom of a mixing glass. Add the remaining ingredients and shake well with ice and tea strain into a rocks glass over ice and garnish with rhubarb stick.I don't work and I don't save, desperate women pay my way.

If you want to meet me in Dease Lk next week with a bunch of strawberry rhubarb pies, that would be a great way to get rid of it

Raspberries go really well with rhubarb. Substitute for the strawberries and you'll be amazed how good rhubarb can be.

One crisp is done, 3 (3.6L) bags and a sink full yet to be dealt with plus the other patch.
Time to find some mix and have me a cocktail.
Might have to start making rhubarb wineI don't work and I don't save, desperate women pay my way.

Stew the rhubarb without the fucking strawberries. That's like diluting Cranberries with other fruit...

My mother in law made a rubarb cake that was excellent. Also jams and jellies. I like it by itself, also good with other berries besides strawberries.

rhubarb pie has always been a favorite. just rhubarb though, no added berries. another good one is rhubarb compote. the drinking kind, not the chutney type (although, rhubarb chutney would be tits!) basically, for the compote, you just cut the rhubarb into chunks (~ 1" pieces or so), cold water (like a bunch...this is like a fruit soup basically), bunch of sugar (to taste...i guess), maybe some cloves, cinnamon stick, perhaps a cardamom pod or few (these would make it more like a rhubarb chai w/o the tea...but you can add tea also). bring it to a boil, let it simmer for like 10-15 mins to get the flavors all mingling. let it cool and enjoy. this compote would work great with gin as well. you can also add chopped apple (tart and firm ones like granny smith would do great because they wont fall apart), you can add dried stone fruit for a more complex flavors. or add fresh berries to balance out the sweetness if you dont want to use too much sugar.
ive never made the chutney, but i would just browse some recipes online and see what appeals to you. rhubarb chutney could probably work well as a substitute to mango (since unripe mango is used for chutney). basically, you just sweat some minced shallots and garlic in olive oil, add the chopped fruit, add some vinegar or juice if you are going for a sweet chutney, dried fruits (dried cranberries, apricots, currants would all do great with rhubarb), spices and seasoning, let it simmer until its thickened but still chunky and not all broken up.
you can do a rhubarb clafoutis...which is kind of like a pie, but not really. like a pie tart mix. they're good, but typically made with cherries.
ive never really eaten raw rhubarb, but it might make for a nice vodka infusion, or liqueur if you also add some sugar.Last edited by AbsolutStoli; 07-05-2009 at 04:46 AM.

you're right, of course.... I guess what I really miss is my mom telling me to go out and pick a big bunch for what ever delicious dish she was going to make next.
you can't turn back time.... but good food sure can bring back some strong memories.

I almost never put in strawberries in my crisp unless the garden is producing both at same time. But something I have thrown in to a R crisp that have turned out well ( very) are saskatoon berries or mangoes.
