Didn't mention but for those unfamiliar with this area College Place is in Walla Walla County. Its city limits begin where W2's end. Anyone here eaten at the brother's places in UT?

If you are into home cooked pizza, the Making Perfect series is a pretty deep dive:

And Vito's channel pretty much owns the Neapolitan:

I made the mistake of buying The Pizza Bible. Damn you Tony Gemignani.

I received the Ooni 3 Oven for Xmas. Just did the first run of 6 pies and results were good. First one was a little overdone, and the last one the best. Learned that it really is a two person process unless you time everything right. Itís interesting cooking in a 900 degree oven.

No, just pellets so far. Should I get the gas addition?

What recipe did you use for the crust?

Yes. Gas burner is an excellent addition.
Brandine: Now Cletus, if I catch you with pig lipstick on your collar one more time you ain't gonna be allowed to sleep in the barn no more!
    Cletus: Duly noted.

I have the same oven, and realized that the hopper that comes with it is way too small for anything other than a pizza or two. A quick trip to the hardware store, and $15 later, I have a hopper that got us through 15 pizzas straight. And bonus points for a bit of a white trash fix. Stupid photo uploader. Assume that the hopper works better vertical than horizontal

When you make your own vs buying: Toppings on top (duh the name) vs under the cheese? Some toppings are better on top? Some better under the cheese?

Discussed this the other day. I like pepperoni on top, but my favorite pizza place puts pepperoni under the cheese. I don't get it, but yet it is so damn good, I can't complain.

*Generally* I put thin sliced tomatoes and onions under the cheese, with pepperoni and hot peppers on top. Maybe a slight sprinkle of cheese over the pepperoni and peppers.
