Forrest Gump
Lawrence of Arabia. I guess that's technically a score rather than a soundtrack. Can I choose The Decline of Western Civilization or are documentaries out of the running? Used to listen to that soundtrack all the time.

I have a hard time getting fired up about movie soundtracks that are just a compilation of good songs that fit the movie theme. An example: Forrest Gump had a great and perfectly fitting soundtrack, but it also sounds just like my local classic rock station on any given Saturday afternoon. Meh. My bias put aside, here's a few:
