There is a restaurant at the top of the Qwest Building downtown. Can't remember the name, and it is not cheap but the few are good if you like the downtown thing.
the Pine Creek Cookhouse outside of Aspen has to be the most spectacular place to dine!

^^^Agreed, but sadly their food doesn't always match the views IMHO. Go for lunch when it is a bit cheaper. For the front range, I'll say Flagstaff as well. Great food and if the patio is open and you eat outside.... awesome.

Not a great view from where you eat, but a historic joint on the light rail line in an emerging Denver neighborhood...
View & food combo, probably Flagstaff (although the view is more of the plains and Boulder/CU than it is of the mountains as I recall).
Best view regardless of food quality would have to be the snack bar at the top of Trail Ridge Road in RMNP. The food will taste better if you ride your bike up there!

I think its kinda funny that nothing in aspen really has a decent view at all. Besides the pine creek cook house, the upstairs of mcdonalds is by far the best view of any restaurant (if you can call mcdisgusting that) in town.

A different option would be the Wildflower @ Lodge in Vail.
Pretty sweet outdoor patio dining amidst hummingbird feeders (and yes, wildflowers). 5 star restaurant so it won't be light in the pocketbook, but it's worth it.
I must disagree about the Flagstaff House. It is overrated as well as overpriced. The courses will be inconsistent -- some good and some not. And the wine list is pretentious and extravagant. The service is of course top notch as are the views, but it is not worth the money in my opinion.
I boiled my thermometer, and sure enough, this spot, which purported to be two thousand feet higher than the locality of the hotel, turned out to be nine thousand feet LOWER. Thus the fact was clearly demonstrated that, ABOVE A CERTAIN POINT, THE HIGHER A POINT SEEMS TO BE, THE LOWER IT ACTUALLY IS. Our ascent itself was a great achievement, but this contribution to science was an inconceivably greater matter.

What happened to the place above the Tattered Cover in Cherry Creek? Views of Denver mostly, but the food was excellent!

Yes. They recently moved into the new 29th Street Shopping Center where Crossroads Mall used to be. They updated their decor and menu too. It was good before but now is a noiser, trendier vibe with still great northern Italian food.
