    I heart sweetened lime juice

    Seems like a no brainer right? Rose's or Major Peter's either way, sweetened lime juice is an essential bar stock from gimlets to VTz a little lime juice goes great, that said it pales in comparison to what you can make in a few moments at home.

    Lemon Boy's Evil Lime Juice:
    limes, squeezed into a small saucepan
    sugar* (1tblspn/lime)
    water (2parts water to 3 parts lime)

    simmer/lightly boil for a few mins while stirring and cool, then use. It is much better than commercial SLJs.

    *I started experimenting with just plain white sugar, now I mix about 2 heaping tablespoons of brown per 12 limes and then sweeten with white sugar to taste.

    Use Turbinado Sugar. Less molasses than brown, so less bitter.

    hey lb, try just combining the water and sugar in the sauce pan. then cool that mixture and add it to the lime juice. .

    the boiling/heating will cook off some of the aromatics of the lime juice, you may get a more intense, fresher flavor without cooking the lime juice.

    it might also be worth trying to zest the limes into the water sugar mixture before heating and strain it out after.

    edit: ive never made my own lime juice, just thoughts i had when i read that recipe.

    Take some sugar (superfine if you can find it) and some lime peel and put it in a plastic bag. Let sit for awhile, few days or so. Discard peel. Take equal parts of the sugar and water and make a simple syrup. Add some lime zest, cool and strain. Then add to lime juice as needed per drink.

    I prefer lime juice sweetened with brown sugar and a decent dose of cachaça.
