Okay...so bachelor dude gets a crock pot thanks to sister's Best Buy gift certificate. I made pork chimichangas yesterday. Loaded her up before I went to work, came home to goodness I've never experienced. I'm sold. This thing makes totally inept cooks like me into some sort of master.
What's in our crockpot? Bonus points for recipes!
Pork Chimichangas:
3lbs of pork roast
2 cups salsa
2 cups water
Seasoning (I used "mexican" seasoning with added salt, pepper and pepper flakes)
Tortillas
Any veggies you want. Onions, corn and peppers are recommended.
Shredded cheese
Slap the pork, water, seasoning and veggies in the pot. Cook on low for 9 hours. Take out meat from water and put in large bowl. Pull apart with 2 forks. Add salsa and mix well.
Throw mixture on tortilla, add cheese. Wrap it up and throw it no a skillet. I just used the skillet to brown it and make it crispy, but you can add an inch of canola oil if you want a true chimi.
