    Ferment was a sluggish with double pitch rate of us-05, I attribute that to it being on the sour side of your average berliner. Took 10 days or so to finish off gassing, and I let it sit with two stages of dry hops for another 10 days. No brett yet grrr! Must be 2 months or so since bottling. And still about 2vol carb. Perhaps I should have made a starter and innoculated more, but it will certainly get there in the end. They are all strains selected for fruit rather than funk, so they will blend and hide behind the hops for a while I suppose.

    Brewed half a batch of a IIPA today (similar to dreadnaught). Tapped an Amarillo blonde. Gotta do something for fall next. Maybe a slightly malty IPA and/or a porter.

    I actually did the same today. Mine has a little orange zest as well.
    I also picked up 75 lbs of organic grains.

    My fall brews will include a pumpkin ale, a steam beer, and possibly my scottish or pale ale.

    No. I have some washed Wyeast 2112 in the fridge. The basement has to get little cooler first.

    No White Labs WLP810? I had to use a dremmel to turn one of their plastic test tubes into an air lock hat once. Why? Because I got drunk and lost the original piece.

    Same strain. LHBS had wyeast.

    I use my home grown hops mainly for dry hopping and in the Randall.

    I have brewed with freshies in the past but its a crap shoot, unless they have been tested in a lab you will have no idea of the AA%.

    And so it begins! 30l 1.052 wort souring at 40c, 3l of 3726 farmhouse ale starter doing it's thing and my lacto culture regenerating in the vial with some fresh apple juice. Next step, add a pile of Nelson Sauvin!

    I finally got some time to work on my new set up. Step one was welding some bungs in for Keggles. First time welding stainless, turned out ok.

    Next up is the stand. More pics to come as I get it pieced together. Just ordered the last of the parts yesterday.

    This thread makes me want to bust out my kettle & carboys. I used to brew a batch every 2 weeks to keep my kegs full. Got into partial-mashes & my beer quality finally got up to my standards & made it hard to drink beer made by anyone else.
