    Made a spaghetti squash bake last night. Roast the squash, add sautéed garlic, onion, spices, tomato sauce, cheese and bake. Very tasty.

    I’ve been hankering Caldo de Camaron but haven’t found a recipe I’m excited about so I am going full on fusion tonight.

    This is the base of the fumet I’m using for Shrimp Bisque, as Escoffier rolls I’m using this to clean out the fridge so gerwurztraminer, grape tomatoes, and a pint of chicken stock are all getting a pass. So far everything tastes great, I will probably redo with actual fish stock, homemade tomato paste, and a dry sauvignon blanc for Thanksgiving. I am thickening with a mix of Basmati and Wild Rice.

    ETA

    post blend and strain. It is a little less rich than I had hoped for but I am in rush. I added two parsley stems and would be interested in adding a fennel frond or two. No saffron because my wife is adverse to the flavor. One day I hope to find saffron that adds depth without much astringency.

    We made caldo de camaron but not as fancy as yours. Good on you for roasting/using the shrimp shells, that makes all the difference in the world.

    Hell yeah! GF returned from a trip overseas and bought the set up. I was skeptical, and generally avoid single use kitchen gadgets.

    I've got mashed potatoes done and the sauteed components cooked and ready to toss with bread and liquid for bacon apple pecan stuffing. Got a bunch of chicken stock jarred up and ready. Gonna make the cranberry ginger relish next!

    Love me some Thanksgiving food
