    I typically just douse with plenty of seasoned salt (Johhny's Dock), ground pepper, garlic powder and onion powder. Seems to work great with everything.

    Was using some brown sugar for a while, but we all decided we liked things better without so only savory now.

    I've got an Asian-style bamboo steamer and a metal folding steamer. Or are you thinking of something else?

    I did the pan steam/fry thing for last night (put the dumplings in a pan with oil, added water and covered until they were steamed through, then took off the cover and let them finish frying). I like doing that for homemade dumplings because it avoids having to move them during the cooking process, so even if your wrap job isn't perfect they don't fall apart. Plus it avoids dirtying more cookware than necessary, and only takes up one burner.

    Nothing compares to doing it in the cast iron. Split and toasted it's divine. The Bob's Red Mill blue corn cornmeal makes for an interesting variation. Tastes pretty much exactly the same as the yellow.

    Watcha cookin'?

    A couple months ago I bought a T-fal Optigrille (no propane allowed in the apartment), was skeptical as hell with the thing due to all the electronics but it had good reviews. Use it 3-4 times a week and must say it's been next to flawless. Took a little time to get it dialed with different types and cuts of meat, it consistently cooks some of the juiciest chicken I've ever had.
