I prefer my bacon as close to uncooked as possible and still be safe. I hate all of you who burn bacon.

Fun fact: White Castles (like their Southern brethren, Krystal) are best enjoyed directly on the shitter.

It's just a more efficient route is all.

I've been wanting to do a crawfish boil since I was young. We've done shrimp and crab boils, but never crawfish. With family coming to visit, we figured it was time. I'm so sold on this idea. I'm not aware of a better way for a lot of people to hang out and stuff their faces while slugging beverages and bullshitting.

We were worried that there would be too much. This was only the first half.

My itty bitty mom and even itty bittier daughter killed those concerns, eating half their weight in crawfish, and helping finish the entire pot.

Dumplings! Made about 50 of them, pork and leek with homemade wrappers. Cooked some tonight and froze the rest for another evening. Took a couple of hours but well worth it.

But that's just to stock up. Tonight we had pan seared duck breasts, seasoned with Sichuan pepper and served with shiitakes and a red wine reduction
