    since i just became aware that the OP is a sushi chef, the meaningfulness of this thread has multiplied exponentially...



    the Old Powerhouse in Kodiak is the only place i've ever seen where you can get highfat king salmon (sake) and bluefin tuna (maguro) sashimi in the same huge chirashi that comes in a bowl about a foot in diameter and few mortal men can finish in one sitting ($39)

    the king salmon are jumping in the channel outside the window, probably because they are being chased by the bluefin...

    the chef will display a little cardboard clock near the items on display at the sushi bar
    no, that's not when the fish gets old -
    that's when the fish came out of the water




    had a licensed sushi chef from Kobe teach me a couple ways to cut salmon a long time ago in Anchorage

    a few months later, i showed my skipper on a salmon seiner what it's about and how to choose a fish
    he was an old Native guy who'd never had sushi
    i finally talked him into trying a piece of silver salmon sashimi one day on the boat... "Don't knock it until you try it!"

    pretty soon, come close to midday, when a king or a silver or a whopper red would flop out of the net, he'd slide it over ever-so-gently with his toe, point to it, and say, "Lunch?"

    'Yeah Jim, i'll get the rice started"
    he'd just smile, pull his knife, and bleed the fish

    Fixed it for you.

    I still roll, but, non-commercially. I get semi-decent fish from Catalina Seafood. Its decent, but, nowhere near the quality I could get while working in an establishment. Finding fresh fish where I live is impossible.

    Any costal mags want to overnight me some fresh fish?

    My favorite is Sushi Vallage. Retarded good. Their Seaweed or Avocado Salad is awesome too if you're game.

    Don't get the Katsu, however.

    Not sure if Ogden is considered a ski town or just Utah's Utica, but I had a pretty decent meal (actually the best meal by far I had in the Ogden area, thats not saying much though) at the Japanese place next to the dive bar that looks like a movie theater.

    I didn't have any sushi, but the guys I was with that did said it was great. They actually went there two nights in a row.

    I remember a cute waitress and the sushi chef being pretty funny. He actually took us over to the aforementioned dive and introduced us to some mad sketchy people. That was a fun night.

    Ate at Kaze in Whistler on Thursday night. The tropical roll was the best sushi roll I've ever had in my life. omfg.

    From Park City - We have numerous - some great, a few suck.
    Oishi Sushi - rocks as does Sushi Maru and Shoyu

    Sushi on Second - Ketchum. Maybe not the best, but the only Sushi joint in a ski town I can think of that I've been to, and this thread is so awsome I had to post something.

    Dave's Sushi in Bozeman is surprisingly good for Montucky.

    Probably nothing in comparison to anything on the coast tho.

    the powerhouse is good but Jackie up at the second floor is soo much better. For the last 4 months I lived on the rock all I ate was sushi. The powerhouse was new then and the chirashi was way better at the second floor.

    Honga's Lotus Petal in Telluride was the first time I ever tried sushi and after that I was then hooked for life. It was pretty damn good! That was in 1999 so I don't know if it's still so good.

    Sushi Village is pretty great too!

    the Second Floor (above the Sizzler Burger) is pretty damn good, but i like the OP a little better
    maybe because i never had maguro before? but then again, they would call me when they got some in (usually as black marketed dragger bycatch, BTW...)

    Anchorage:
    before Peter's burnt up, i rated it second behind Yamato Ya
    almost apples and oranges, but i liked Peter's hand rolls and Yamato's sashimi
    the chef at YY makes what he called a "Cajun" sauce that is fucking unbelievable for splashing big chunks of bigeye
    his san bai zu is pretty damn good too



    sit at the bar, tell him what you are in the mood for, and turn him loose
