Was it an extract kit? You may have burnt some of the extract? Cooling without a wort chiller shouldn't affect flavor.

Tutuko, how long did it take to ferment? I made a berliner weisse very similar to yours, but just used US-05 to ferment. Did any of the brett character come through?

Read both of these recently. Recommend both of them, although I enjoyed the Goldfinch more.
