Mate have a look at Myoko kogen. 4 linked resorts, really mellow and a few hours out of Tokyo. Gets a SHIT TON of snow. Also a really good Aussie run ski school/rental joint and good food options....

Push it out a month and you can get to the goods within 2hrs shinkansen out of tokyo, but around december best off heading north to Hokkaido.

As well, if you wanna do Hokkaido and Honshu in the same trip an idea is to use Chuo Taxi to transfer from Narita/Haneda airport to Nagano areas- it's a little expensive but it'll mean you are picked...
