177 if you are a finesse skier, want them to excel in bumps, and really tight places. 184 if you are hard charging, want extra stability, and could give a crap of optimal nimbleness in tight places.
I am 5'10" 160lbs, and I prefer 180-185. Just more stable at speed and through crud. I have to work a little harder in the bumps, and tight spots.

i bought the 177 Mantra. I am 5'5 140lbs. If you race, and ski with technical precision, meaning you work the ski exactly how it was designed to turn, geometrically, you should go up to 184, if you muscle the ski around and make it out there by being strong and forceful, I would suggest the 177 cause you are going to get tired fast on the bigger of the two skis.
People have mentioned that they think I have bought too big of a ski. I am using this ski as a specific powder ski for soft days only. I have better choices for in-between days. I skied the B3 178cm in BC last winter and thought i was on the correct length (the ski was weak).
Picking a size is tough, especially if you are a race type skier. I took a guess on size (torn between the 70 or 77) but opted for the longer mainly because the swing (7cm) is large which made the 170 too short for big mountain skiing....

I'm 6'1, and used to weigh 165 lb (now 180 lb). Try eating more.
I'd say length is actually only tied to your height and skiing style/preferences. While I can't argue with personal preference, I think you're largely up in the night with your height comment. A taller person of a given weight will leverage their skis more than a shorter person (not necessarily a good thing); and, a taller skier may have more mass; however, generally speaking, a skier's height has nuth-ing to do with the length of their ski. IMO
Weight is more relevant to the flex of the ski. At 6'1", you're going to be most comforable at speed on a 185-190cm ski. At your weight, you probably want something a little softer and lighter at the tips and tails. Maybe some sugardaddy pimps?A skier's ability to pressure the ski is a huge part of the equation. A light skier that is technically proficient can work a ski pretty hard, but that still doesn't mean they should go too long, i.e., 185-190. A heavier skier, by virtue of mass alone, will work a ski pretty hard. Combine a good skier, that tips the scales more than the average bear, and that person will need a longer ski to effectively distribute their weight over the length of the ski.
Unless I am mistaken, Mrthemike has been looking at Volkl's Mantra and AC4. Based on the fact that he skis a 168 Allstar as his hardpack/groomer ski and the Mantra or AC4 will be his powder/crud ski, I would recommend 177's.
That's my story and I'm sticking with it.

What are you gonna use those skis for?
First of all I would say that if you allready have a groomer ski, and want something for powder/soft snow/off-piste, I would go for something wider. Quite a few people use the 90-95mm waist width as their all round ski, if they ski like 75% off-piste. With you allready having a piste ski, I wouldn't buy a sub 90 mm waist ski as an addition to your quiver (i.e Mantra at 94 is ok, Karma at 87 is too skinny). You could easily go for the Gotamas as well IMO.
Length; I would say; don't even think about 177. I would say that even 184 would be on the shorter side for you. It depends on what you are gonna use them for, though. Open areas skied with speed and longer turns calls for longer stiffer skis. Tight spaces (trees, colouirs etc) with low speed and quick short turns calls for shorter skis. But if you're skiing open spaces, I would recommend the 191 ski, not the 184.
A lot of it depends on how "forcefully" you ski, though, which I don't know.
