curtis mayfield's got some goodies
as mentioned above, craig armstrong's "the space between us" will bring you to tears.
so much great house and techno (ie, fingers inc. "can you feel it") would techincally fall into "instrumentals", but there's too much to list.

You're living in the wrong area (for jazz, at least).

Seconded. I immediately thought of this.
Endless: The Gladiator Soundtrack is by Hans Zimmer (Bev Hills Cop & Miami Vice themes) and Lisa Gerrard, formerly of Dead Can Dance. Don't know if you can call that truly instrumental, since she's moaning on most of them.... but stunning soundscapes nonetheless.

That was the first thing that poped into my mind.
However, Led Zep's "Bonzo at Montreaux" isn't too shabby.

Oh, yeah, drum solos.
I was talking to a workmate that actually paid $350 to see Cream at the Garden a few weeks ago, and he said Ginger Baker actually looked the best of all three, which I found upsetting, because I gave him up for dead when I saw his picture in Life magazine in, like, 1969. And he actually did a really long drum solo during Toad, of which said workmate started to get technical in his description about his technique before my eyes glazed and I wondered what crappy food they had for me in the cafeteria for lunch.

Orion by Metallica, especially since it's the end track for the Cliff 'Em All documentary, right after the tour bus rolls over.
